Makes 12 servings
Ingredients
560 mL (2 1/4 cup) all-purpose flour
5 mL (1 tsp) baking soda
2 mL (1/2 tsp) salt
60 mL (1/4 cup) margarine, softened
60 mL (1/4 cup) sugar
125 mL (1/2 cup) egg substitute
6 packets sugar substitute
125 mL (1/2 cup) unsweetened applesauce
5 mL (1 tsp) vanilla extract
1 mL (1/4 tsp) almond extract
1 237-mL bottle Vanilla Glucerna
90 g (3 ounces) dried pitted cherries
125 mL (1/2 cup) chopped pecans

Preparation
- Preheat oven to 350°F (180°C).
- Spray 23 X 12.5 cm (9 x 5-inch) bread pan with vegetable oil, and flour
sides.
- In medium bowl, combine flour, baking soda, and salt. Set aside.
- In large bowl, cream margarine and sugar together. Add egg substitute and
continue to mix for an additional minute. Add sugar substitute, applesauce,
vanilla, and almond extract.
- Alternately add flour mixture and Glucerna until ingredients are just
moistened. Stir in cherries and nuts.
- Pour batter into prepared pan.
- Bake for 50 to 60 minutes or until inserted toothpick comes out clean.
- Cook completely before slicing.
